ChefHagi Harutomo - A Chef Walking Together with Producers
Born in 1976 in Iwaki City, Fukushima Prefecture. After graduating from culinary school, he trained in France and in Tokyo, and opened the French restaurant "Belcourt" in 2000. In 2011, following the Great East Japan Earthquake, he renamed the restaurant to its current name and changed to a style where he personally introduces ingredients and handles all cooking. In 2013, he participated in a culinary fair held in Paris, where he served dishes to the French President and the Prince of Monaco at a palace. He received the "Culinary Masters Silver Award" from the Ministry of Agriculture, Forestry and Fisheries.
Food "Promoting Fukushima's Excellent Ingredients to the World"
In addition to directly sourcing excellent ingredients from producers in Fukushima Prefecture, we take advantage of our location, just 15 minutes from the fishing port and 10 minutes from the fields, to use materials that are extremely fresh. A symbolic example is the sardines that we personally bid for at auction. Although they are often considered cheap fish locally due to their short shelf life, Mr. Hagi insists that if they are exceptionally fresh, they are "a treasure that rivals any high-end fish." While the fatty ones are undoubtedly delicious, you will also be amazed by the exquisite flavor of sardines that are not fatty. This is the ultimate luxury that cannot be experienced in the city.
Others Bringing Out the Flavor of Fresh Ingredients with Charcoal Grilling
The cooking method that is actively incorporated is wood-fired cooking. By directly applying the gentle flames from burning oak wood to grill fish and other ingredients, the surface becomes fragrant while the fresh umami is locked inside. Depending on the ingredient, pruned branches from grapevines may also be used for finishing touches to add aroma. As Mr. Hagi says, "Wood is one of the ingredients. The scent of the fire is like a sauce," the grilled fish becomes a dish enveloped in a nostalgic and comforting aroma.
