We use fresh ingredients sourced daily by air from Fukuoka's Central Market and Toyosu Market to offer our carefully crafted sushi. The vinegared rice is seasoned only with red vinegar and salt, creating a rich flavor. We adjust the temperature and saltiness to prioritize the perfect pairing with tuna, resulting in a vinegared rice that complements it beautifully. Enjoy the marriage of tuna and vinegared rice with our "Tuna Sushi." You can savor the aroma and umami, and feel the lingering aftertaste that remains deeply after swallowing.
Food "Seasonal Delicacies and Unique Items That Capture the Essence of the Time"
Considering the compatibility with tuna, we carefully select seasonal ingredients to match the vinegared rice. We offer a variety of fresh seasonal ingredients such as kohada (gizzard shad), squid, and sea urchin. To bring out the natural flavors of the ingredients, we handle them gently and shape them with just the right amount of pressure. Additionally, we prepare classic side dishes like fugu (pufferfish) and ankimo (monkfish liver) as well as narazuke (Nara pickles), which you can enjoy as part of our seasonal course menu. Space"An Elegant Adult Space with Sukiya-style Interior Design"
Designed by architect Shinji Maeda, this tranquil space features a Sukiya-style interior. We offer three types of counter private rooms: the "Kashou no Ma" with a single slab counter, the "Kanbai no Ma" with an L-shaped counter, and the "Zuikou no Ma," a tea room-like space with only four seats accessible through a small entrance. Each room has a unique layout, making them ideal for special occasions such as entertaining guests or celebrating important milestones.
